What started out as a full day trip for myself and a mate on his Himalayan turned into just a morning up to Mt White on the Old Pac Highway. He'd invited another mate on a Sportster, which then didn't start, so ended up on a very loud Enfeild Bullet. So any attempt at any even slightly off road work was canned. Probably for the best, given the weather we've had recently. All the back roads north of Calga towards Wollombi and down to Wiseman's are in a very sad state after the flooding.
I've been to Mt White more times than I can remember, but I've never ever seen so many bikes on the road as last Sunday. So many of them oblivious to others on the road to the point where it became most unenjoyable. On coming bikes were constantly crossing centre lines and forcing us to tighten up our left corners making it really unsettling.
One high point however, was that on the way back just around Cowan, I saw a bright yellow Ural going north. The rider was dressed in camo colours and had a very exited passenger. Sorry we didn't get to stop and exchange niceties. My assumption is that it was Daslowranger's old Bondi.

A few months ago I did the "Old Road" from Cowan to Kariong. Mid week early and the road to myself. Very enjoyable at the speed limit, reckon I only touched the brakes once or twice on entry to the tighter corners. I steer clear of it on the weekends for the reasons you listed. As for your Bondi coming the other way, there are Urals out there and not all of them are in here.

The Old Road. What a famous motorcycling road. I first rode it before I was old enough to have L plates. I still use it when skirting through Sydney to avoid the mayhem on the expressway. Heading north, after a stop at Pie in the Sky I join the expressway at Brooklyn. Coming south I get out of the traffic by exiting near Mt White, to the old road.
